I love all varieties of fish, but I especially enjoy eating mildly-flavored, buttery salmon. I try to eat salmon as often as possible, however I often get tired of making the same old recipe week after week. Always looking for new ways to prepare this pink-hued, meaty-fleshed fish I decided to try stuffing it. You really can’t go wrong with one food stuffed into another, right? Right. Especially this stuffed salmon recipe.

Salmon, while extremely tasty on its own, is kicked up a notch or should I say 10 notches when stuffed with the right ingredients. A combination of feta cheese and spinach easily turns everyday ordinary salmon into a mouth-watering, restaurant-worthy meal in mere minutes.

This is an easy and delicious recipe that’s perfect for a quick weeknight dinner. The salmon fillets are stuffed with a mixture of spinach, and feta cheese and roasted for approximately 20 minutes. The stuffed fillets are best paired with a peppery arugula salad; making for an extra tasty meal.

Most grocery store salmon, although appearing to be fresh, is often previously frozen. The downside to this is not only are you spending a lot of money to purchase frozen seafood, it also must be eaten right away. If you are purchasing salmon or any fish from the seafood counter, it’s helpful to consult with the clerk on the freshness. With this in mind it should also be a priority, when purchasing seafood of any kind to make sure it doesn’t smell “fishy”.  A salty ocean order, however, depicts freshness and is what want to sniff.

The easiest way to tell if salmon is cooked is to gently press down on the top of the fillet with either a fork or your finger. If the salmon flakes easily it’s finished cooking. Depending on the size of your piece of salmon, reaching doneness takes about 12-15 mins. Note that the stuffed salmon takes slightly longer due to cooking through the stuffing ingredients.

A rosé such as AIX Rosé 2021, from the heart of Provence is the perfect wine to serve with salmon. It has notes of strawberry, watermelon, peach and subtle floral hints…think summertime in a bottle. For a sparkling option, opt for Dough Wines 2016 Sparkling Brut Rosé. Hailing from Willamette Valley, OR, it’s a layered, aromatic wine with a ginger-laced finish.

Preheat oven to 450°F.

Butterfly salmon fillet so that it lays open flat in one large piece. Turn salmon over so gray underside is facing up and arrange on a clean work surface.

Season salmon with salt and pepper then spread fillet with mustard and arrange half of the spinach over the top, leaving a 1-inch border around the edges. Evenly spread crumbled feta on top of spinach and top with remaining spinach. Starting from one of the long sides, gently roll up salmon and tie snugly with cooking twine at 1-inch intervals.

Gently transfer salmon to a greased baking sheet then brush top and sides with oil and season outside with salt and pepper. Scatter oregano over the top and sides and roast until just cooked through, about 20 minutes. Set aside to let rest for 5 minutes then carefully transfer to a serving platter, remove and discard string to serve.
